samples: net: sockets: echo: Convert to work both IPv6 and IPv4 



The sample enables CONFIG_NET_IPV4_MAPPING_TO_IPV6 and then
turns off IPV6_V6ONLY option which allows it to support both
IPv6 and IPv4 using the same socket.
