samples: zbus: fix samples to work with iterable sections observers

Replace the `CONFIG_ZBUS_RUNTIME_OBSERVERS_POOL_SIZE` with the
`CONFIG_ZBUS_RUNTIME_OBSERVERS` and add the heap. Add user_data to hello
world sample iterator functions.
