samples: usb: console: Remove overlay file

After the removal of the virtualcom DT node in 5071eeec, using the chosen
node is no longer functional. Instead the Kconfig
CONFIG_UART_CONSOLE_ON_DEV_NAME is used to locate the correct UART.
