tests: Bluetooth: Tester: Increase RTT_MESSAGE_SIZE 



Sets CONFIG_LOG_BACKEND_RTT_MESSAGE_SIZE=256 as some log
messages are longer than 128 (default) and may be truncated
with the existing configuration and implementation.
