fuel_gauge: composite: choose sensor channel types

Choose whether the data sources should be queried by the generic sensor
channels (`SENSOR_CHAN_VOLTAGE`, etc), or the fuel guage specific
channels (`SENSOR_CHAN_GAUGE_*`).
