samples: drivers: led: led_strip: esp32s3-devkitc led uses GPIO38

Change `GPIO39` to `GPIO38` in overlay.
The esp32s3_devkitc rgb led is connected to GPIO38, not 39.
Tested change on board and verified to function as intended.
