boards: nucleo_f401re: Update to default configuration guidelines 



Update nucleo_f401re to fit with default configuration guidelines:
- configure I2C1 as arduino i2c and spi1 as arduino spi
- disable I2C and PWM by default
- update yaml
- update doc
