shell: Fix reference to nonexistent Kconfig symbol

The code referenced CONFIG_SHELL_VT100_COLORS_ENABLED which does not
exist.  Its mostly likely that CONFIG_SHELL_VT100_COLORS was meant
to be tested instead.
