Bluetooth: Shell: Remove ad-hoc `CHAR_SIZE_MAX`

Remove ad-hoc `CHAR_SIZE_MAX` in favor of `BT_ATT_MAX_ATTRIBUTE_LEN`.
The maximum size of an attribute is the same as the maximum size of a
characteristic.
