boards: remove Kconfig option LVGL_DISPLAY_DEV_NAME 



Remove Kconfig option LVGL_DISPLAY_DEV_NAME.
Also remove it from mimxrt10xx_evk boards to have consistent
configuration, even if they do not benefit from it that much.
