tests: gpio_api_1pin: support for emulated GPIO 



This adds support for emulated GPIO (CONFIG_GPIO_EMUL=y) and
additionally allows BOARD=native_posix and
BOARD=native_posix_64 to run the gpio_api_1pin test suite.

Fixes #26477
