input: rename callback define macro to INPUT_CALLBACK_DEFINE

Looking back at the current INPUT_LISTENER_CB_DEFINE api naming, it
feels like it's a bit overloaded. Rename it to a simpler
INPUT_CALLBACK_DEFINE.
