posix: threads: use non-deprecated kconfig 



MAX_PTHREAD_COUNT was deprecated in favour of
POSIX_THREAD_THREADS_MAX prior to v3.7.0.

Use CONFIG_POSIX_THREAD_THREADS_MAX going forward.
