Bluetooth: Shell: Add testcases for AUDIO_RX and TX disabled

Add configurations where CONFIG_BT_AUDIO_TX and CONFIG_BT_AUDIO_RX
are disabled.

Fixes issues found in the BT shell implemented caused by these
configurations.
